PROFFITT, ELIZABETH ANN PARSON (LIB), age 84 of Gatlinburg, passed away Tuesday, February 5, 2008 at Fort Sanders Regional Hospital. Originally from Athens, TN, where she was known as Sook, she then moved to Knoxville and met her husband of 52 years, Ellis Proffitt. They later moved to Pittman Center where Ellis was originally from. She was preceded in death by her daughters and spouses: Betty Joe and Jeanie; husband: Ellis; brother: Jack Parson; and parents: L.H and Inez Dixon Parson. She leaves behind her daughters: Sara and husband Kyle Phillips Jr., Janis and husband Chuck Bird, both of Knoxville, and Jackie Proffitt of Gatlinburg. She also leaves her grandchildren and their spouses: Michael and Johnna Phillips and Melissa and Robbie Gass, along with great granddaughters: Abigail, Sydney, and Delaney; sister: Catherine Wyatt of Athens; as well as numerous nieces, nephews, sisters and brothers in law. Graveside funeral services will be held 11:00 AM Thursday, February 7, 2008 in the Proffitt Cemetery on Hwy. 321 in Pittman Center With Reverend Charles Parker officiating.
