Downtown bistro planned: Bistro 109 to locate in former Tomato Head location
By Iva Butler | ivab@thedailytimes.com
Sevierville restaurateur Dustin Trent Manning plans to open a restaurant and floral/design shop this spring in the former Tomato Head restaurant location in downtown Maryville.
Bistro 109 restaurant and D Garden floral and interior design shop will be similar to Bistro 109 in Sevierville, which Manning has operated for five years.
The precise date for the opening depends on when Manning can get a state liquor license. That could mean being open as early as April or as late as July.
A restaurant operator must have a beer permit, which Manning got last night from the Maryville Beer Board, before he can apply for a liquor license.
Manning operates the Sevierville restaurant and floral and design shop in a historic building downtown on Bruce Street.
“We have a ton of clients in Maryville. We have been delivering floral arrangements there for the last five years,” he said, adding that these customers are also patrons of the Sevierville restaurant.
Manning said the Tomato Head, which was located at 211 W. Broadway Ave., was one of his favorite restaurants. He and a friend ate there one day and came back the next day with another friend to find the business closed.
He immediately contacted building owner Mike Owens and leased the building for his second restaurant and floral/design shop.
“It is a perfect fit for us. We love historical downtown locations,” Manning said.
The main corporate office for Manning Design Concepts has been located on Court Avenue in Sevierville for 16 years. The restaurant and floral design shop first opened in that historic location.
Manning said the 4,800-square-foot Maryville restaurant has seating for about 150, inside and on the patio. There will be an estimated 40 employees.
Wine, espresso bars
The menu will be very close to the Sevierville restaurant fare and it will have an espresso bar.
The eatery will also have a wine bar that specialize in having a large variety of wines available. There are 40 to 50 types of wine available at the Sevierville location.
The interior of the Maryville store will have the same upscale ambiance as the Sevierville restaurant, he said.
There will be a live pianist every night. “We’re looking at a baby grand at this time,” Manning said.
A Sevier County native, Manning now lives in the old farmhouse of his maternal great-grandparents, Scottie and Poppy Fox. It was there that Scottie Fox taught Manning, now 33, to cook on an iron wood stove after he split wood for the stove.
He said his relatives, including paternal great-grandparents Daisy and Link Manning, always gave back to the community.
They grew a two- to three-acre garden every year.
Link Manning would take Dustin Manning through the garden, putting various vegetables in 10 to 15 bags. They would then go throughout the community giving them out to neighbors.
“He was known as the Vegetable Man,” his great-grandson said. “Everybody loved him.”
